Fox on Food - Ronan Fox chef new series on Ballina Community Radio 2

Fox on Food, an innovative new Facebook Live series by Ballina Community Radio 101.9FM featuring local chef Ronan Fox is shining a light on the richness of the North Mayo food community. Complimented by a radio show on the station each Saturday at 3pm, the video series features Ronan meeting with a range of stakeholders in the food industry, from chefs, restaurant owners, managers, hotels, nutritionists and teachers, to hear their stories and showcase the range of talent and local produce that exists in the region.

Cookery demos also form part of the series and viewers can pick up lots of tips on how to get the best out of all their locally sourced ingredients in this informal and chatty show.

Fox on Food Episodes to date

Episode 1 features a broadcast from Bofield National School, where under Ronan’s tutelage, students prepare three receipes. Ronan chats to the principal of Bofied, Liam Forde on how to foster a love of cooking among children and families. Other guests on the show include Padraig Walsh, manager of the Fr. Peyton Centre in Attymass (famous for its scrumptious home baking!), parent Kathleen Langan, nutritionist Marie Mulherin, and Emma Norton of Kids Get Cooking.  Watch here.

Episode 2 features a visit to the Diamond Coast Hotel, Enniscrone, winner of this year’s Best Hotel Restaurant in Sligo at the RAI Awards. Ronan speaks to Deputy Manager Mary Clarke, chef Michelle McGowan, winner of the RAI Best Chef Award (Sligo), culinary tutor Patrick McGuinness, John Clarke of Clarke’s Salmon Smokery and Frank Igoe Meats. Episode 3 tells the story of Heffernan’s Fine Foods and Heifer and Hen Restaurant, owned by Anthony Heffernan. Of course we’re no strangers to Heffernan’s here in Mayo North, as it featured in our recent Mayo North Food Series, but Ronan brings us behind the scenes in the butcher and restaurant, speaking with Anthony about the history of the butcher and the restaurant, where a firm “farm to fork” policy is in operation. Food rarely travels, and is hung and aged on site to ensure the best quality meat possible for the customer. Steak is in high demand from the Heifer and Hen menu and it’s not hard to see why!
