- Andrew, tell us a little about yourself and your journey into the kitchen.
My journey into the kitchen started at home and through my mother, who worked in restaurant kitchens where food was always at the heart of everything — family, tradition, and a deep sense of place. I grew up surrounded by the smell of stews on the stove, fresh bread in the oven, and the quiet rhythm of home cooking. It was never about being fancy — it was about feeding people well and with love. That early connection sparked a passion in me to learn more, to experiment, and to turn something simple into something meaningful. Over time, that love became a craft.
- What makes your new menu at The Moy Hotel special?
Our new menu is special because it brings together fresh, locally sourced ingredients, seasonal flavours, and modern twists on classic dishes. We ensure quality and originality in every bite. Whether you’re after a comforting favourite or something new and exciting, there’s something for everyone, plus, our carefully selected wine pairings enhance the entire dining experience.
- Do you have a signature dish or one you particularly enjoy preparing?
I don’t have one specific signature dish, because I enjoy the creative process behind the whole menu. What I really love is working with fresh, seasonal ingredients and seeing how a dish evolves from an idea to something our guests genuinely enjoy. For me, it’s about the variety and the challenge — whether it’s refining a comfort classic or experimenting with something new, that’s what keeps it exciting in the kitchen
- Foxford has such a strong sense of place – does local produce or the landscape inspire your cooking?
Absolutely the Foxford landscape is a constant source of inspiration in the kitchen. The natural beauty of the area, from the River Moy to the Ox Mountains and the rich farmland that surrounds us, influences both the ingredients we use and the way we present our food The lush pastures and clean waters mean access to incredible local lamb, beef, dairy & freshwater fish, and our own Wild herbs
- What do you hope guests feel or what they will says when they sit down to one of your meals at The Moy Hotel?
When guests sit down to one of our meals, I hope they feel welcomed, relaxed, and genuinely cared for. More than just good food, I want the experience to feel warm and grounded — like they’re sharing a meal that was made with thought, heart, love, and a deep respect for the ingredients and where they come from. - And finally – if you could cook for anyone from Mayo, past or present, who would it be and what would you serve?
Present Cooking for my kids is one of the purest joys in my life. It’s not about fancy ingredients or perfect plating — it’s about care, comfort, and giving them a sense of home. Growing up food was always about family and togetherness, and that’s what I try to pass on. Whether it’s a big Sunday roast or a simple bowl of soup after school, I want them to feel loved, grounded, and proud of where they come from
