Chef Randy Lewis, a rising star, will be the first chef to co-host Belleek Castle’s ‘Chef Spotlight Night’ on Friday, December 10, 2021 at 6.30pm.
The event will open with a Champagne reception.
“I am Randy Lewis, a Canadian foodie, chef and travel enthusiast. I am honoured to be invited to debut the first Annual Chef Spotlight Night at Belleek Castle on December 10th. This will be my first real castle experience and I am delighted to have been invited by Head Chef Allan Maynard at Belleek Castle to co-host this evening which promises to be full of fun, banter, and amazing food!” says Randy Lewis.
“Together with Chef Allan, we will create a 6 course menu combining old world flavours and new world flavours from around the world resulting in a Gala Dinner Food Extravaganza.”
From champagne flutes to flambeed steak on a sword, this event is sure to promises to kickstart your Christmas season at Belleek Castle.

Think mouthwatering dishes including Chestnut & Sauerkraut pierogi; Goat’s Bridge Smoked Trout caviar, yuzu; Achill Island Oysters Beef jelly, horseradish, 24-hour cooked McHales Irish Featherblade of Beef winter truffle, smoked carrots, champ, jus; charred fillet of Atlantic Cod Borlotti beans with Killary Fjord mussels and GoatsBridge Cavia Butter Sauce, followed by dessert, a Walnut whip with 70% dark chocolate ganache and chantilly cream, and to finish it off Turkish Delight Petit Fours.
