Billy’s is a small sourdough pizza and wine bar in the courtyard of the historic Old Bond Store in Ballina, beside Dillons. We opened in March last year, following a full refurb to reflect the character of the courtyard. The idea was simple: a short menu, ingredients that actually matter, and a cosy space where locals and visitors can settle in for the evening.
Our pizza recipe began with Jeff Varasano in Atlanta Georgia and was developed in our kitchen by Rob Gillespie. The crust is slightly charred — crisp on the outside, airy and light inside. The ingredients aren’t piled high; they’re balanced. Sweet, salty, full-flavoured, never greasy, with tomatoes that burst with flavour. Each bite makes you hungrier for the next.
Our ingredients come from a specialist Italian food importer in Wicklow. The wine list is built with Liam and Sinead of Cabot & Co in Westport — small, thoughtful, and chosen to drink alongside the food.
