From Humble Beginnings to Culinary Mastery

Chef Piotr Matysik’s culinary journey is a testament to resilience and passion. Despite family advice steering him towards alternative careers, his heart remained steadfastly set on the culinary arts. Beginning his professional life as a mechanic and later exploring the world of block laying, Piotr eventually found himself drawn to the vibrant world of food.

In 2006, Piotr arrived in Ireland, initially finding work on construction sites. However, the economic downturn of 2008 abruptly shifted his trajectory. Jobless overnight, Piotr sought solace in the bustling kitchens of Belleek Castle. Never afraid of hard work, he started as a kitchen porter, he immersed himself in the whirlwind of culinary activity, laying the foundation for his culinary ascent.

Under the guidance of Head Chef Stephen Lenahan, Piotr’s passion blossomed into expertise. From washing pots to perfecting culinary techniques, Piotr’s dedication caught the eye of his mentor. Swiftly ascending to the role of sous chef, he embraced each challenge with unwavering enthusiasm, honing his craft with every dish.

In March 2023, an opportunity beckoned at the Erris Coast Hotel—a remote gem nestled along the breathtaking Erris Coast. Enchanted by the serene setting and warm hospitality, Piotr seized the chance to lead the hotel’s culinary endeavours.

Drawing inspiration from the bounty of Erris’s land and sea, Chef Piotr crafts dishes that celebrate the region’s rich culinary heritage. With a commitment to sourcing locally, each ingredient tells a story of community and tradition.
