Chef Marcin Szczodrowski serves up five-star food at the Ocean Sands Hotel

The executive head chef at the Ocean Sands Hotel in Enniscrone, Sligo, Marcin Szczodrowski has made quite an impact on the Irish culinary scene. Since moving here from his native Poland he has built a stellar reputation as an outstanding chef winning both the Yes Chef Rising Star and Best Chef in Connaught awards along the way. He was well known as head chef in award-winning Eala Bhán Restaurant in Sligo Town. He’s brought all of his fine dining flair to the Ocean Sands. Since joining the Ocean Sands team, he has created a number of new menus. They include lunch and dinner and also introduced a stunning afternoon tea experience which is indulgence personified. Chef Marcin’s take on Sunday lunch is proving popular with a menu which changes every week. The Chef’s Table is his take on a fine dining tasting menu. It uses the best of local and Irish produce from trusted suppliers.

Early Influence and Training

From a very young age Marcin has been fascinated by everything to do with cooking and food. He began early in his grandmother’s kitchen. Marcin remembers her as both a fine and enthusiastic cook and an inspirational teacher. Today, he finds himself in the role of the teacher, introducing his daughter Emily to the world of food and cooking. He also loves to train young chefs, identifying their strengths and helping them to develop. He values creativity highly.

Through his grandfather who was a butcher, Marcin learned all about meat. How to handle different cuts and use the whole animal, giving him a head start on many other chefs. When he left school, it was a natural progression for him to study Culinary Arts at third level. He took to it like the proverbial duck to water.

Embracing Irish Ingredients and Seasonality

The quality of Irish ingredients consistently amazes Marcin, who revels in working with them and believes it’s nearly impossible to go wrong. Perhaps he underestimates his own talents. He is strongly committed to working with seasonal products and detests the jarring impact of out-of-season elements on menus. Asparagus or strawberries in January just don’t cut it for this chef. He believes in getting the best out of his ingredients, and to do that they need to be top quality, fresh and in season. He sees authentic food provenance as an essential pillar of his cooking, and particularly enjoys sourcing local produce. Marcin also relishes experimenting and developing recipes, particularly using local seafood like Sligo mussels and fish from Joe Gavin in Enniscrone which literally couldn’t be fresher.

Gastronomic Journeys and Influences

Marcin loves to eat out in fine restaurants and appreciates the work that goes in at Michelin star and high end establishments. Asked about the best meal he has ever had, he finds himself struggling to decide. Eventually he chooses a dish he had at Neven Maguire’s MacNean House – a trio of venison served with blackberry jus and coffee. His eyes mist over as he recalls the sublime taste.

Pursuit of Perfection

Marcin is a perfectionist in terms of food presentation, “You eat with your eyes first”, is his mantra, and he insists that his kitchen team stick to his high standards. He is enthusiastic about his team at the Ocean Sands and the ability and enthusiasm they bring to their work.
